Budget-friendly New Mexican green chile stew with hamburger, a simple and satisfying dish made with everyday ingredients.
Ingredients:
  • 14 ounces Hatch chile peppers
  • cooking spray
  • 1 medium onion
  • 2 medium carrots, grated
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and coarsely chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 3 cups water
  • 3 cubes chicken bouillon
  • 1 tablespoon ground black pepper
Instructions:
  • Place the oven rack 6 inches below the broiler and preheat the broiler. Cover a baking sheet with aluminum foil.
  • Gently spray chile peppers with cooking oil and arrange on the baking sheet.
  • Broil peppers until skin is blackened and blistered, turning halfway through, for 10 to 15 minutes. Transfer blackened peppers to a bowl, tightly cover with plastic wrap, and let steam as they cool for about 20 minutes. Peel off and discard skins, then chop the chiles and set aside.
  • Once the peppers have cooled, halve the onion. Finely chop one half and roughly chop the other; then set aside.
  • 1. Heat a large pot over medium-high heat, then cook and stir ground beef until browned and crumbly, for about 5 to 7 minutes. Next, add minced onion, carrots, celery, and garlic, and saute until the onion begins to turn translucent, approximately 5 minutes. Transfer the flavorful mixture to a bowl, leaving any rendered fat in the pot.
  • Saute potatoes until browned, then combine with meat mixture, diced tomatoes, and onions in a pot. Bring to a slow boil, stir in chiles, then add water, bouillon, pepper, salt, and oregano. Simmer for 1 to 1 1/2 hours, stirring occasionally.
