Herb and green onion beef patties

Kid-friendly veggie burgers that are hearty and delicious.
Ingredients:
  • 550g beef mince
  • 1 egg, lightly beaten
  • 250.00 ml fresh breadcrumbs
  • 250.00 ml frozen vegetables (corn, pea, celery, onion and red capsicum mix)
  • 2 green onions, thinly sliced
  • 62.50 ml finely chopped mixed fresh herbs (such as flat-leaf parsley, oregano, basil or chives)
  • 18.20 gm olive oil
  • Salad leaves, to serve
  • Halved bread rolls, to serve
  • Tomato chutney, to serve
Instructions:
  • In a large bowl, mix together mince, egg, breadcrumbs, corn mix, onion, herbs, salt, and pepper until well combined. Shape the mixture into 8 balls using 1/3 cup of mixture each, then flatten slightly into patties. Cover and refrigerate for 30 minutes if desired.
  • In a large frying pan over medium-high heat, heat oil. Cook patties for 3 to 4 minutes on each side until fully cooked. Place salad leaves on the bottom half of the rolls. Layer patties, chutney, and the top half of the rolls. Serve and enjoy!
