Roast beef with herb and garlic butter recipe

Indulge in succulent herb and garlic butter roast beef, paired with steamed green beans and Brussels sprouts for a hearty cold weather feast.
Ingredients:
  • 100g butter, softened
  • 1 garlic clove, crushed
  • 20.00 ml chopped oregano
  • 20.00 ml chopped flat-leaf parsley
  • 1.4kg No Added Hormones Australian Beef Roast Topside
  • 3 red onions, halved
  • 750g washed potatoes, chopped
  • 300g parsnip, peeled, chopped
  • 37.60 gm sour cream
  • Steamed green beans, to serve
  • Steamed brussels sprouts, to serve
  • Oregano leaves, to serve
  • Flat-leaf parsley leaves, to serve
Instructions:
  • Preheat your oven to 180°C. Mix butter, garlic, chopped oregano, and parsley in a small bowl until well blended.
  • Massage half of the butter mixture onto the beef, ensuring it is well coated. Sear the beef in a hot frying pan for 5 minutes, turning occasionally, until all sides are nicely browned. Transfer the beef to a roasting pan and surround it with onions. Give the onions a quick spray of olive oil. Roast everything in the oven for 1 hour and 10 minutes, or until the beef reaches your desired doneness. Cover the beef with foil during roasting if needed to avoid excessive browning.
  • While waiting, in a large saucepan, combine potato and parsnip, covering them with cold water. Bring to a boil, then cook for 15 minutes or until tender. Drain and return to the pan. Add sour cream, then mash with a potato masher or fork until smooth. Season to taste.
  • Slice the beef into thick pieces and serve on a platter with onions, mashed potatoes, remaining butter mixture, green beans, Brussels sprouts, oregano leaves, and parsley leaves.
