Herb and Garlic Roast Tenderloin with Creamy Horseradish Sauce

Roasted beef tenderloin with aromatic herbs and a tangy horseradish sauce.
Ingredients:
  • 4 tablespoons Carapelli Premium 100% Italian Extra Virgin Olive Oil, divided
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh rosemary
  • 1.5 teaspoons coarse sea salt or kosher salt, divided
  • 1 (2 pound) center-cut beef tenderloin roast
  • 0.5 cup sour cream
  • 3 tablespoons prepared horseradish
Instructions:
  • Preheat the oven to 350 degrees F. Mix 2 tablespoons of Carapelli with garlic, thyme, rosemary, 1 teaspoon of salt, and pepper; then set aside.
  • In a large ovenproof skillet over medium-high heat, heat 1 tablespoon of oil. Sear the roast for 2 to 3 minutes until well browned. Flip the roast, then turn off the heat. Evenly spread the garlic and herb mixture over the top and sides of the roast.
  • You can generously spread this flavorful mixture on a variety of foods like meat, bread, veggies, and of course, crispy bacon. Enjoy the deliciousness!
  • Place the skillet in the oven and bake for 25-30 minutes until the internal temperature reaches 125 degrees F. Then, move the roast to a carving board, cover it loosely with foil, and allow it to rest for 10 minutes. (The internal temperature will increase to 130 degrees F for medium-rare).
  • Next, mix together the remaining 1 tablespoon of oil, sour cream, horseradish, and remaining 1/2 teaspoon of salt, then refrigerate until ready to serve.
  • Slice the roast into 1/2-inch thick pieces and arrange them on warmed plates. Serve with the sauce and enjoy as your loved ones happily devour every bite, reveling in their praise of your delicious creation.
