Herb and Garlic Roast Leg of Lamb

Savor this herb-crusted roasted leg of lamb with flavorful pan juices, ideal for a delightful dinner.
Ingredients:
  • 1/4 cup finely chopped fresh parsley
  • 1 tablespoon chopped fresh or 1 teaspoon dried rosemary leaves, crumbled
  • 1 tablespoon chopped fresh or1 teaspoon dried thyme leaves, crumbled
  • 3 tablespoons olive or vegetable oil
  • 2 teaspoons kosher salt
  • 1/2 teaspoon pepper
  • 2 cloves garlic, finely chopped
  • 5- to 6-pound boneless leg of lamb
Instructions:
  • Preheat your oven to 325°F.
  • Combine all ingredients, except for the lamb, in a small bowl and mix thoroughly.
  • Place the lamb in a roasting pan, ensuring to keep the netting or string on. Spread the herb mixture evenly over the lamb. Insert a meat thermometer into the thickest part of the lamb, making sure it doesn't touch any fat.
  • Roast uncovered for 2 hours and 5 minutes to 2 hours and 15 minutes for medium-rare, or until thermometer reads 140°F. For medium doneness, bake until thermometer reads 155°F.
  • Take the dish out of the oven and gently cover it with aluminum foil. Allow it to rest for 15 to 20 minutes until the thermometer shows 145°F (or 160°F for medium doneness). Remember to remove any netting or string before serving. Drizzle with pan juices if preferred.
