Savor a delicious beef rib roast for dinner - a delightful meal!
Ingredients:
  • 1 beef rib roast, small end (4 to 6 lb)
  • 2 teaspoons dried basil leaves
  • 2 teaspoons dried thyme leaves
  • 1 teaspoon coarse (kosher or sea) salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon coarse ground black pepper
Instructions:
  • Preheat your oven to 350°F. Line a shallow roasting pan with foil for easy cleanup. Put the beef, fat side up, in the pan. In a small bowl, combine basil, thyme, salt, garlic powder, and pepper; sprinkle and press the mixture onto all sides of the roast. Place an ovenproof meat thermometer into the thickest part of the beef, making sure it doesn't touch the bone. Do not add water to the pan.
  • Roast uncovered in the oven until thermometer reads 135°F for medium-rare. Let the beef rest covered loosely with foil until thermometer reads 145°F. For medium, roast until thermometer reads 150°F, then rest covered loosely with foil until thermometer reads 160°F.
  • Transfer the beef from the pan to a carving board, then slice. Serve with pan drippings, if desired.
