Whip up a delicious crunchy herb crusted baked salmon with warm risoni salad in just 20 minutes for a quick and satisfying weeknight meal.
Ingredients:
  • 2 x 325g pkts Salmon Garlic & Herb Marinade & Crumb (2 pack)
  • 80ml olive oil
  • 295g risoni
  • 90g pesto
  • 60g pkt Baby Rocket
Instructions:
  • Preheat the oven to 180°C. Line a large baking tray with parchment paper. Combine the crumb mixture from the salmon packets with oil in a bowl. Place the salmon on the lined tray, sprinkle with the crumb mixture, and gently press down. Bake for 15 minutes or until the salmon is cooked through.
  • While the risoni is cooking in a large saucepan of boiling water following packet directions, drain it, reserving 1/3 cup (80ml) cooking liquid, and return it to the pan.
  • Combine the pesto and reserved cooking liquid with the risoni in the pan. Mix well. Season with salt and pepper. Gently mix in the rocket. Serve the risoni mixture and salmon on plates. Drizzle with a bit of extra olive oil before serving.
