Grilled salmon with tangy pasta - a flavor sensation!
Ingredients:
  • 250g dried angle hair pasta
  • 63.70 gm olive oil, plus extra to grease
  • 1 red onion, halved and sliced
  • 20.00 ml capers, rinsed, roughly chopped (Aristocrat brand)
  • 1 tsp grated lemon rind
  • 52.50 gm fresh lemon juice
  • 20.00 ml chopped fresh dill
  • 125.00 ml roughly chopped fresh Continental parsley
  • Salt & freshly ground black pepper
  • 4 (about 230g each) salmon fillets
Instructions:
  • Boil pasta in a large pot of salted water until al dente according to package instructions. Then, drain the pasta.
  • In a large frying pan over medium heat, warm 1 tablespoon of oil. Sauté the onion, stirring occasionally, until soft, about 2-3 minutes. Stir in the garlic and capers, and cook for an additional minute.
  • Take the pan off the heat and combine the pasta, lemon zest, lemon juice, herbs, and the rest of the oil. Season with salt and pepper.
  • Season the salmon generously with salt and pepper. Heat a chargrill pan over high heat, then reduce to medium and lightly oil it. Grill the salmon for 2-3 minutes on each side until cooked to your liking. Serve the salmon on top of the pasta on individual plates.
