Garlic- and Herb-Broiled Rainbow Trout

Quick and delicious heart-healthy garlic and herb broiled trout recipe from Betty Crocker's cookbook!
Ingredients:
  • 4 rainbow trout or other medium-firm fish fillets, 1/4 to 1/2 inch thick (about 1 pound)
  • 2 tablespoons lime or lemon juice
  • 2/3 cup soft bread crumbs (about 1 slice bread)
  • 1 teaspoons Italian seasoning
  • 2 teaspoons canola or soybean oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
Instructions:
  • Preheat oven to broil. Grease broiler pan rack. Arrange fish on rack. Drizzle with lime juice. Broil 3 minutes, keeping tops 4 inches from heat source.
  • Combine the remaining ingredients while the fish is broiling.
  • Sprinkle bread crumb mixture over the fish and broil for an additional minute, or until the fish flakes easily with a fork.
