Succulent rolled turkey with garlic, herbs, roasted nuts, and cranberries - a holiday delight!
Ingredients:
  • 250g butter, softened
  • 6 garlic cloves, crushed
  • 40.00 ml lemon thyme leaves
  • 125.00 ml roughly chopped fresh basil leaves
  • 82.50 ml roughly chopped fresh oregano leaves
  • 2 x 1.5kg fresh single turkey breasts with skin (see notes)
  • 36.40 gm extra virgin olive oil
  • 82.50 ml pecans
  • 82.50 ml pistachio kernels
  • 40.00 ml pepitas
  • 125.00 ml frozen cranberries
  • 89.38 gm honey, warmed
  • 2.40 gm sea salt flakes
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Line two large rimmed baking trays with parchment paper. In a medium bowl, mix together butter, garlic, thyme, basil, and oregano. Season with salt and pepper, and set aside.
  • Carefully butterfly the turkey breast without cutting all the way through. Flatten the turkey to 1cm thickness by gently pounding with a meat mallet. Spread half of the butter mixture evenly over the turkey, leaving a border. Roll the turkey into a log shape and secure with kitchen string at 4cm intervals. Repeat with the remaining turkey breast and butter mixture.
  • - Heat half of the oil in a large frying pan over medium-high heat. Sear the turkey for 6 to 8 minutes until browned. Place on a prepared tray. Repeat with the remaining oil and turkey on the same tray. Bake for 1 hour and 15 minutes until cooked through. Cover with foil and let it rest for 15 minutes before serving.
  • Spread pecans, pistachios, pepitas, and cranberries evenly on a baking tray. Drizzle with warm honey and sprinkle with sea salt. Bake for 15 to 20 minutes until golden and bubbling. Allow to cool completely on the tray, then roughly break into pieces.
  • Drizzle the turkey with the pan juices and top with the crumble before serving.
