Make perfectly jammy soft-boiled eggs soaked in soy and honey overnight, ideal for topping your ramen. Slice cleanly with a wire for a flawless cross-section.
Ingredients:
  • 6 large free-range eggs
  • 5 cm piece of ginger
  • 1 clove of garlic
  • 80 ml low-salt soy sauce
  • 50 ml sake
  • 1 tablespoon runny honey
Instructions:
  • Boil the eggs for exactly 5½ minutes, then transfer to iced water. Slice the ginger, smash the garlic, and combine with soy sauce and sake in a pan. Boil for 5 minutes, stir in honey, and let it sit for 3 minutes. Strain and keep the liquid. Mix 500ml water into the liquid. Peel the eggs, add to the marinade, and refrigerate for 24 hours before serving.
