Perfect Thai Fried Rice With Marinated Chicken

Deliciously marinated chicken stir-fried with rice, eggs, garlic, and aromatic cilantro for a flavorful fried rice dish.
Ingredients:
  • 1 pound boneless chicken thighs, cut into 1/3-inch pieces across the grain
  • 2 tablespoons light soy sauce
  • 2 tablespoons brown sugar
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 0.25 cup chopped onion
  • 4 cloves garlic, chopped
  • 2 eggs, beaten
  • 3 tablespoons light soy sauce
  • 1 teaspoon white sugar
  • 1 teaspoon ground white pepper
  • 4 cups leftover cooked rice
  • 0.25 cup thinly sliced green onions
  • 0.25 cup chopped cilantro
Instructions:
  • In a bowl, mix chicken thighs with 2 tablespoons of soy sauce, brown sugar, and black pepper. Cover and let marinate in the refrigerator for 2 hours to overnight.
  • Preheat a wok or large skillet on high for 30 seconds. Add vegetable oil and reduce heat to medium. Sauté onion and garlic until fragrant, about 2 minutes.
  • Turn up the heat to high and toss in the marinated chicken in the wok. Keep stirring vigorously until the chicken is cooked through and no longer pink, which should take around 4 minutes.
  • In the wok, separate the chicken mixture from the eggs. Cook the eggs for about 2 minutes until they start to set. Gently scramble the eggs, then combine them with the chicken. Add 3 tablespoons of soy sauce, sugar, and white pepper. Stir for 1 minute to blend the flavors.
  • Combine rice in the wok, ensuring even heating for approximately 4 minutes. Take off heat; gently fold in green onion and cilantro until well mixed.
