Tamarind, Honey & Sesame Chicken

Discover the magic of tamarind sauce with Thai-inspired flavors. Sweet and sticky tamarind, fish sauce, and sugar create a perfect match for crispy fried salmon. Elevate juicy chicken thighs with a delicious blend of tamarind, honey, garlic, and sesame oil for an addictive dish.
Ingredients:
  • 120 g tamarind paste
  • 8 tablespoons honey
  • 3 tablespoons fish sauce
  • 2 tablespoons light soy sauce
  • 2 tablespoons sesame oil preferably toasted
  • 4 cloves of garlic crushed
  • ½ teaspoon salt
  • 4 spring onions cut into 5cm pieces
  • 8 chicken thighs skin on, bone in, fat trimmed
  • spring onion finely sliced

Instructions:
  • - Preheat the oven to 200°C/180°C fan/gas mark 6. - Combine tamarind, honey, fish sauce, soy sauce, sesame oil, garlic, and salt in a jug. - Pour half of the sauce into a roasting tray, add spring onions, score chicken thighs, and place them in the tray skin side up. Marinate for at least 20 minutes. - Season chicken thighs with salt flakes and black pepper, then roast for 40–50 minutes. For crispier skin, grill for a minute or two. - Sprinkle with sliced spring onions, combine tray juices with sauce, and drizzle over the chicken. Serve with rice, Cucumber pickle, Garlicky green beans, and Peanut serundeng.
