Quick and delicious pineapple fried rice with fresh pineapple, peas, onion, and bell pepper, perfect with any protein!
Ingredients:
  • 2 tablespoons vegetable oil
  • 0.5 cup diced sweet onion
  • 1 tablespoon grated ginger root
  • 1 clove garlic, minced
  • 1.5 cups fresh pineapple chunks
  • 0.5 diced red bell pepper
  • 0.33333334326744 cup thawed frozen peas
  • 2 cups cold, cooked white rice
  • 2 tablespoons low-sodium soy sauce, or to taste
  • 1 teaspoon sesame oil
  • 2 tablespoons sliced green onion
  • 1 teaspoon toasted sesame seeds
Instructions:
  • In a large skillet over medium heat, sizzle the onion in hot oil for 1 minute. Introduce ginger and garlic, and continuously stir for another minute.
  • Turn up the heat to medium-high and toss in the pineapple, red bell pepper, and peas. Keep stirring for 3 to 4 minutes. Then, mix in the rice and soy sauce and cook until everything blends well, which should take about 1 to 2 minutes. Finally, add the sesame oil and take it off the heat.
  • Sprinkle with fresh green onion and toasted sesame seeds just before serving.
