Flavorful broiled salmon with abundant garlic, parsley, oregano, and basil.
Ingredients:
  • 6 lemon slices
  • 2 (5 ounce) skin-on salmon fillets
  • 0.33333334326744 cup olive oil
  • 1 lemon, halved, divided
  • 0.33333334326744 cup chopped fresh parsley
  • 0.33333334326744 cup chopped fresh oregano
  • 0.25 cup chopped fresh basil
  • 4 cloves garlic, or more to taste, minced
  • 1 tablespoon kosher salt, divided
Instructions:
  • Position the oven rack 6 inches away from the heat source and preheat the broiler. Line a baking pan with aluminum foil.
  • In a medium bowl, coat salmon fillets with oil. Place them skin-side down in a baking pan. Squeeze juice from half a lemon over the fillets and season both sides with parsley, oregano, basil, garlic, and half of the kosher salt.
  • Broil until the center is a delicate pink and the edges are golden brown, for about 10-15 minutes.
  • Take the fillets out of the oven and plate them right away. Drizzle the remaining lemon half over the top and sprinkle with the rest of the kosher salt. Serve with lemon slices on the side.
