Indulge in a savory garlic and herb panko-crusted pork chop with flavorful rice in just 25 minutes! Perfect for a cozy solo meal.
Ingredients:
  • nonstick cooking spray
  • 1 (5 ounce) bone-in, center-cut pork chop
  • 1 tablespoon mayonnaise
  • 0.25 cup garlic- and herb-seasoned panko bread crumbs
  • 0.5 (6 ounce) package cheddar-broccoli rice mix (such as Knorr®)
  • 0.75 cup water
  • 2 tablespoons whipping cream
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) while you grease a 6x8-inch casserole dish with cooking spray.
  • Spread a layer of mayonnaise on one side of the pork chop and firmly press panko breadcrumbs onto the mayonnaise.
  • Transfer the rice mix into the casserole dish, followed by the water and cream. Stir well. Arrange the pork chop with the seasoned side facing up, sprinkle generously with Parmesan cheese.
  • Cook in the preheated oven for about 20 minutes until the center is no longer pink. Ensure it reaches an internal temperature of 145°F (63°C) when tested with an instant-read thermometer.
