Savory herb and cereal crusted baked chops with zesty garlic-citrus sauce.
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 1 tablespoon finely chopped fresh cilantro
  • 1 teaspoon finely chopped garlic
  • 2 teaspoons grated orange peel
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 4 pork loin chops, 1/2 inch thick (4 oz each)
  • 1/2 cup buttermilk
  • 2 teaspoons olive oil
  • 1 tablespoon finely chopped garlic
  • 1/4 cup lime juice
  • 2 tablespoons orange juice
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Preheat oven to 400°F. Grease a cookie sheet with cooking spray. Place cereal in a resealable plastic bag, seal, and crush using a rolling pin, meat mallet, or food processor.
  • Combine cereal, 1 tablespoon cilantro, 1 teaspoon garlic, orange peel, onion powder, oregano, cumin, and pepper in a shallow dish. Dip pork chops into buttermilk, then coat them entirely with the cereal mixture. Transfer to a cookie sheet.
  • Bake for 25-30 minutes or until the pork is fully cooked in the center.
  • In a 1-quart saucepan, heat oil over medium heat. Sauté 1 tablespoon of garlic in the oil for about 1 minute until golden. Add lime and orange juices, bring to a boil, then remove from heat and stir in 2 tablespoons of cilantro. Refrigerate covered until ready to serve. Enjoy with pork chops.
