Pork Chops and Apples

Intimate meal for two, quick and simple to prepare.
Ingredients:
  • 1 medium unpeeled cooking apple, sliced
  • 2 tablespoons packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 bone-in pork rib chops, about 3/4 inch thick (about 1/4 pound each)
Instructions:
  • Preheat oven to 350°F. Arrange apples in a 1 1/2-quart rectangular casserole dish and sprinkle with brown sugar and cinnamon. Cover with foil and bake for 15 minutes.
  • Trim the excess fat from the pork. Coat a nonstick skillet with cooking spray and heat over medium heat for 1 to 2 minutes. Sear the pork in the skillet for about 6 minutes, flipping once, until it turns light brown.
  • Lay the pork over the apples, cover, and bake until the pork is cooked through, reaching an internal temperature of 145°F, and the apples are tender, about 10 to 12 minutes.
