Elevate grilled pork chops with a vibrant spice rub for a flavor explosion.
Ingredients:
  • 2 tablespoons grated lime peel
  • 1 tablespoon cumin seed
  • 1 tablespoon cracked black pepper
  • 2 tablespoons olive or vegetable oil
  • 1 clove garlic, finely chopped
  • 4 boneless pork loin or rib chops, about 1 inch thick (about 2 pounds)
  • Mango slices, if desired
Instructions:
  • Prepare your grill with hot coals or set your gas grill to direct heat. Trim excess fat from the pork. Combine all Cuban Rub ingredients in a small bowl and generously season both sides of the pork with the mixture.
  • Grill the pork over medium heat, turning frequently, until it's no longer pink and reaches an internal temperature of 160°F. Top with mango slices before serving.
