Grilled Cuban Pork Pressed Sandwiches

Hearty pork, ham, and cheesy paninis satisfy cravings!
Ingredients:
  • 1/2 lb pork tenderloin, cut crosswise into 4 slices
  • 3 tablespoons olive oil-and-vinegar dressing
  • 2 teaspoons grated lime peel
  • 1 teaspoon dried oregano leaves
  • 4 slices (1 oz each) provolone cheese (from deli)
  • 4 soft kaiser rolls, split
  • 8 thin slices (1 oz each) baked ham (from deli)
  • 3 tablespoons yellow mustard
  • 3 tablespoons dill pickle relish
Instructions:
  • Place the pork between sheets of plastic wrap and gently flatten it with the flat side of a meat mallet until very thin. Transfer the pork to a glass baking dish. In a small bowl, combine the dressing, lime peel, and oregano. Spread this mixture over the pork, ensuring it's well coated. Allow the flavors to meld while you preheat the contact grill.
  • Preheat a medium-size contact grill with the lid closed for 5 minutes. Ensure the drip tray is positioned to catch drippings. Grill the pork until no longer pink in the center, about 5 to 6 minutes. While the pork is cooking, assemble the sandwiches by placing cheese on the cut sides of the roll bottoms, adding ham on top (pleating if needed). Spread mustard and pickle relish on the cut sides of the bun tops. Once the pork is ready, place it on top of the ham, assemble the sandwiches, and press down firmly. Enjoy your hearty, flavorful sandwiches!
  • Prepare the grill by wiping the plates and applying cooking spray. Arrange the sandwiches on the grill, ensuring the tops of the rolls stay in place. Press down gently on the grill to compress the sandwiches. Grill for 3 to 4 minutes until the rolls are toasted and the cheese is melted.
