Indulge in creamy yogurt and mushroom-covered pork chops for a quick and delicious dinner in just 30 minutes!
Ingredients:
  • 4 boneless pork loin chops (1/2 inch thick)
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 4 teaspoons canola or olive oil
  • 1 medium onion, cut into thin wedges
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 4 teaspoons cornstarch
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 4 cups hot cooked rice or pasta
Instructions:
  • Season both sides of the pork chops generously with seasoned salt and pepper. Heat 2 teaspoons of oil in a large nonstick skillet over medium-high heat until shimmering. Cook the pork chops for about 4 minutes on each side until they develop a delicious golden brown crust. Remove the pork chops from the skillet and set them aside.
  • In the same skillet, warm the remaining 2 teaspoons of oil over medium heat. Cook the onion and mushrooms for 3 minutes, stirring often.
  • Combine chicken broth and cornstarch in a measuring cup, then pour into the skillet and bring to a boil. Return the pork chops to the skillet and spoon the sauce over them. Cover and simmer for 8 to 10 minutes until the pork is cooked through, stirring occasionally.
  • Blend yogurt seamlessly into mixture over low heat until warm. Enjoy with rice or pasta.
