Savory pork chops in rich mushroom and onion gravy, served over fluffy rice alongside crisp veggies and buttery cornbread.
Ingredients:
  • 2 teaspoons seasoned salt
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 4 pork chops, 3/4-inch thick, or more to taste
  • 0.5 cup self-rising flour
  • 0.25 cup vegetable oil
  • 1 yellow onion, thinly sliced
  • 1 cup sliced fresh mushrooms, or more to taste
  • 1 teaspoon water, or as needed
  • 2 cups water
Instructions:
  • Combine seasoned salt, garlic powder, black pepper, and paprika in a bowl. Gently massage about 3/4 teaspoon of the spice mixture onto each pork chop. Dredge the pork chops in flour, making sure they are fully coated, and save the remaining seasoning and flour for the gravy.
  • In a hot skillet, sear pork chops in vegetable oil until golden brown on both sides, about 3 minutes each. Place pork chops on a plate and cover with paper towels to keep warm, leaving pan drippings.
  • Sautee onion in the flavorful drippings in a heavy skillet over medium heat until beautifully caramelized, about 5 to 10 minutes. Mix in mushrooms, the rest of the flour, the remaining spice blend, and a touch of water if necessary; continue cooking until the onion is a lovely golden brown, around 5 minutes.
  • Combine 2 cups of water into the onion-mushroom mixture until a smooth gravy forms, then bring to a boil. Place pork chops in the gravy, lower the heat, cover the skillet, and simmer until tender for about 1 hour. Ensure the pork chops reach an internal temperature of at least 145°F (63°C) when tested with an instant-read thermometer in the center.
