Bacon and onion stuffed pork chops smothered in a rich, creamy balsamic sauce with sour cream, garlic, and butter - a decadent delight!
Ingredients:
  • 2 tablespoons butter
  • 2 (6 ounce) thick-cut pork chops
  • 1 tablespoon butter
  • 2 tablespoons bacon bits
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons chopped onion
  • 0.5 teaspoon prepared yellow mustard
  • 0.5 clove garlic, minced
  • 8 toothpicks, or as needed
  • 1 clove garlic, minced
  • 0.5 cup balsamic vinegar
  • 0.25 cup Worcestershire sauce
  • 1 teaspoon prepared yellow mustard
  • 2 cups sour cream
Instructions:
  • Preheat your oven to 350°F (175°C) for that perfect baking temperature.
  • Place a pork chop on your work surface and carefully use a sharp boning or paring knife to create a pocket by making a slit in the side. Repeat this step with the remaining pork chops.
  • In a skillet over medium heat, sizzle 1 tablespoon of butter before adding bacon bits, 2 teaspoons Worcestershire sauce, onion, 1/2 teaspoon mustard, and 1/2 clove garlic. Saute until the onion turns soft and translucent, around 5 minutes. Let the stuffing cool for 5 to 10 minutes, then use it to fill the pork chops, securing with 2 crossed toothpicks.
  • In a large skillet over medium heat, melt 2 tablespoons of butter until sizzling. Brown the pork chops for about 2 minutes on each side. Transfer the pork chops to a baking dish, keeping the flavorful drippings in the skillet. Cover the baking dish with aluminum foil.
  • Roast the pork chops in the preheated oven for approximately 30 minutes until they are fully cooked, and reach an internal temperature of 145°F (63°C) when tested with an instant-read thermometer.
  • In a skillet, warm up the reserved drippings over medium heat. Add 1 clove of garlic, balsamic vinegar, 1/4 cup Worcestershire sauce, and 1 teaspoon of mustard. Let it simmer until reduced for about 5 minutes. Mix in sour cream and coat the pork chops with the sauce.
