BBQ Bacon Cheddar-Stuffed Pork Chops

Stuffed bacon and cheddar pork chops seared and baked, served with Betty Crocker™ mashed potatoes for a delicious meal in a breeze.
Ingredients:
  • 4 boneless pork loin chops (3/4-inch thick), trimmed of fat (about 1 1/2 lb)
  • 1/3 cup shredded sharp Cheddar cheese
  • 1/3 cup chopped cooked bacon
  • 1/4 cup Annie's™ organic sweet & spicy barbecue sauce (from 12-oz bottle)
  • 1/4 teaspoon pepper
  • 1 1/2 teaspoons olive oil
  • Sliced green onion, if desired
  • Betty Crocker™ creamy butter mashed potatoes, prepared as directed on pouch, if desired
Instructions:
  • Preheat oven to 450°F. Grease a 15x10x1-inch pan with cooking spray or line it with parchment paper.
  • Create a pocket in the thick side of each pork chop by cutting a 2-inch deep and 3-inch long slit (do not cut through). In a small bowl, combine cheese, bacon, and 4 teaspoons of barbecue sauce. Fill each pocket generously with a spoonful of the cheese mixture, pinch the edges together, and secure with a toothpick.
  • Season both sides of the pork with a pinch of salt and pepper. Heat oil in a 12-inch nonstick skillet over medium-high heat. Sear the pork chops for 1 to 2 minutes on each side until they are lightly browned. Arrange pork chops evenly on the pan.
  • Bake the pork for 8 to 10 minutes or until the meat thermometer reads 145°F when inserted into the thickest part. In a small microwavable bowl, heat the remaining barbecue sauce covered on High for 45 to 60 seconds or until warmed through.
  • Prior to serving, carefully remove the toothpicks from the pork chops. Drizzle the chops with warmed barbecue sauce and garnish them with fresh green onions. Accompany the dish with creamy mashed potatoes.
