Delight the whole family with juicy parmesan-crusted pork chops.
Ingredients:
  • 3 slices white bread
  • 2 tsp mixed herbs
  • 1 egg, lightly whisked
  • 4 (about 800g) pork mid loin chops
  • Olive oil spray
  • 1 x 200g punnet golden grape tomatoes, halved
  • 1 Lebanese cucumber, ends trimmed, coarsely chopped
  • 1 ripe avocado, halved, stone removed, peeled, coarsely chopped
  • 62.50 ml fresh oregano leaves
  • Fat-free French dressing, to serve
Instructions:
  • Add the bread to the food processor and pulse until finely chopped. Mix the breadcrumbs, garlic, herbs, and parmesan in a bowl. Season with salt and pepper to taste.
  • Take the egg and place it in a shallow bowl. Dip the pork chops in the egg, then coat them with the breadcrumb mixture by pressing gently.
  • Lightly coat a non-stick frying pan with olive oil spray. Sear the pork over medium-high heat for 4-5 minutes on each side for a medium cook or until desired doneness.
  • Combine tomato, cucumber, avocado, and oregano in a bowl. Drizzle with dressing, toss gently, then plate and serve with the pork.
