Elevate your Sunday roast with flavorful spiced pumpkin.
Ingredients:
  • 1kg butternut pumpkin, peeled, cut into 2.5cm pieces
  • 4 garlic cloves, thinly sliced
  • 20.00 ml fresh marjoram leaves
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced. Line a baking tray with parchment paper and spread the pumpkin evenly on it.
  • In a frying pan over low heat, gently warm the oil. Stir in garlic and marjoram, cook until fragrant, about 1 minute. Remove from the heat and let it sit for 5 minutes. Pour the aromatic oil over the pumpkin. Roast for 40 minutes until golden and soft. Finish with a sprinkle of fresh parsley before serving.
