Roast forerib of beef with garlic & rosemary

Elevate roast beef with sweet garlic and crispy rosemary for a delicious twist!
Ingredients:
  • 1 x 2.25 kg forerib of beef (with 2 bones)
  • 1 bulb of garlic
  • 4 sprigs of fresh rosemary
  • 1 knob of unsalted butter
Instructions:
  • Preheat the oven to 240°C/475°F/gas 9 and place a large roasting tray inside to heat up. Allow the beef to come to room temperature for 1 hour. Crush most of the rosemary leaves with 3 cloves of garlic, sea salt, and oil in a mortar. Rub the paste all over the beef. Add the remaining whole garlic cloves to the hot tray with the beef. Roast for about 50 minutes, basting occasionally, then reduce the oven to 190°C/375°F/gas 5 for 10 more minutes, until desired doneness. Rest the beef with butter and remaining rosemary. Serve with pan juices drizzled on top and your favorite sides.
