Delicious New Mexican breakfast casserole with eggs, hash browns, bacon, and roasted green chilies.
Ingredients:
  • 2 tablespoons vegetable oil, or more as needed
  • 1 (26 ounce) package frozen hash browns
  • 8 slices bacon
  • 2 cups shredded Cheddar cheese
  • 1 (8 ounce) can roasted green chile peppers, chopped
  • 8 eggs
  • 12 (8 inch) flour tortillas
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease a 9x12-inch baking pan.
  • In a large skillet over medium heat, sizzle the oil. Add hash browns and onion, sauté and stir until hash browns reach crispy perfection, approximately 10 minutes.
  • In a separate skillet, crisp up the bacon over medium-high heat, giving it a flip from time to time, until beautifully browned, for about 10 minutes. Then, drain the bacon on paper towels and crumble it into delightful pieces.
  • Create a mouthwatering stack in the baking pan: start with the hash brown-onion mix, scatter bacon, 1 1/2 cups Cheddar cheese, and green chile peppers. Gently crack eggs over the layers and finish with a sprinkle of the remaining 1/2 cup Cheddar cheese.
  • Bake until eggs are set and cheese is slightly golden, for 20-30 minutes in a preheated oven. Serve alongside warm flour tortillas.
