Energize your morning with a delicious new breakfast creation!
Ingredients:
  • 1/2 cup fat-free egg product or 2 eggs
  • 1 tablespoon water
  • Dash salt
  • 1/4 teaspoon chili powder
  • 2 medium green onions, sliced
  • 4 white corn tortillas (6 inch)
  • 1/4 cup fat-free refried beans
  • 2 tablespoons thick & chunky salsa
  • 1/4 cup shredded reduced-fat sharp cheddar cheese
  • Reduced-fat sour cream, if desired
Instructions:
  • Whisk egg product, water, salt, and chili powder in a medium bowl until well combined.
  • Preheat a 10-inch nonstick skillet over medium heat. Saute onions for 1 to 2 minutes until they are tender-crisp. Lower the heat to medium-low and pour in the egg mixture. Cook for 2 to 3 minutes, stirring often, until the eggs are cooked through but still slightly creamy. Transfer the eggs from the pan and keep them warm.
  • Evenly distribute 2 tablespoons of refried beans and 1 tablespoon of salsa on each of 2 tortillas. Add the seasoned egg mixture, cheese, and place the remaining tortillas on top.
  • After cooking each quesadilla in the skillet for 3 minutes on medium heat, carefully turning halfway through, cut them into quarters and serve with extra salsa and sour cream.
