Delicious Huevos Rancheros with chorizo, eggs on corn tortillas with salsa and cheese. Perfect for any meal!
Ingredients:
  • 1/2 pound bulk chorizo or pork sausage
  • Vegetable oil
  • 6 corn tortillas (5 to 6 inches in diameter)
  • 1 1/4 cups salsa
  • 6 fried eggs
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
Instructions:
  • Sear sausage in a skillet over medium heat, stirring occasionally, until fully cooked; drain and transfer to a plate.
  • In the same skillet, heat a thin layer of oil over medium heat until just hot. Fry tortillas one by one in the oil for about 1 minute until crispy, then drain. Warm up the salsa until hot.
  • Spread a tablespoon of salsa on each tortilla to enhance their flavor and texture.
  • Lay an egg on each tortilla. Spread a generous spoonful of salsa on top of each egg, then add 1/4 cup of sausage, a second spoonful of salsa, and sprinkle 2 tablespoons of cheese over each.
