Spice up breakfast with a flavorful huevos rancheros casserole featuring tostadas, beans, salsa, and sunny-side-up eggs. Perfect for a delicious anytime meal!
Ingredients:
  • 3 cups salsa
  • 2 teaspoons reduced-sodium taco seasoning
  • 14 corn tostadas
  • 1 (15-ounce) can pinto beans
  • 1 cup chopped scallions
  • 8 ounces shredded Mexican cheese blend
  • 6 large eggs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 avocado
  • 1/2 cup fresh cilantro leaves
Instructions:
  • Preheat your oven to 375°F.
  • Prepare the casserole: Mix salsa and taco seasoning in a bowl. Spread 1 cup of the salsa mix evenly at the bottom of a 13x9-inch baking dish. Layer with 7 tostadas, 3/4 cup pinto beans, 1/2 cup scallions, and 1 cup cheese. Repeat layering with remaining ingredients. Spoon 6 dollops of salsa on top of the cheese.
  • Create a well in the salsa dollop with the back of a spoon, then crack 1 egg into each well. Season each egg with salt and pepper.
  • Let it shine: Place aluminum foil over the casserole and bake for 35 to 45 minutes until the egg whites are set and yolks are runny. Let it rest for 5 minutes. Add diced avocados and cilantro on top before serving.
