Delicious and healthy salmon skewers with zesty lime wedges, perfect for BBQs or a light family meal.
Ingredients:
  • 5 limes
  • 40.00 ml finely chopped fresh dill leaves
  • 1 tsp drained capers, finely chopped
  • 6.00 gm brown sugar
  • 75.08 gm light olive oil
  • 3 garlic cloves, crushed
  • 2.40 gm celery salt
  • 500g skinless boneless salmon fillets (see note), cubed
  • 100g sugar snap peas
  • 1 bunch asparagus, trimmed, cut into 4cm lengths
  • 80g baby Asian salad greens
Instructions:
  • Juice one lime and cut the rest into 8 thin wedges. Mix dill, capers, sugar, 1 tablespoon lime juice, 2 tablespoons oil, 2 tablespoons water, and a third of the garlic in a jug. Cover and set aside.
  • Mix together the celery salt, leftover garlic, and oil in a shallow glass or ceramic dish. Add the salmon and toss until evenly coated.
  • Skewer lime wedges and salmon. Preheat barbecue plate or chargrill over medium heat. Grill skewers, turning occasionally, for 6 to 8 minutes or until salmon is cooked through.
  • While waiting, heat a saucepan of water until it boils. Boil peas and asparagus for 3 to 4 minutes until they turn bright green and become tender. Drain and rinse under cold water. Mix salad greens, peas, asparagus, and half of the lime mixture in a bowl. Distribute the mixture among plates. Place skewers on top and drizzle with the remaining lime mixture before serving.
