Try this quick and delicious grilled salmon for a satisfying meal!
Ingredients:
  • 1 long red chilli, seeds removed, finely chopped
  • 10.00 gm caster sugar
  • 21.00 gm lime juice, plus lime wedges to serve
  • 12.20 gm fish sauce
  • 2 tsp sesame oil
  • 500.00 ml coriander leaves
  • 250.00 ml mint leaves
  • 1 punnet grape tomatoes, halved
  • 2 eschalots, thinly sliced
  • 4 x 180g salmon or ocean trout fillets
  • 18.40 gm sunflower oil
  • Steamed jasmine rice (optional), to serve
Instructions:
  • Preheat the oven to 190°C for the perfect start to your culinary masterpiece.
  • Combine the chili, sugar, lime juice, fish sauce, and sesame oil in a bowl, stirring until the sugar is dissolved.
  • Tear the fresh herbs directly into a separate bowl, then mix in the tomatoes and eschalots.
  • Season the salmon fillets generously with salt and freshly ground black pepper, then let them rest.
  • In a non-stick ovenproof frypan over medium-high heat, warm the sunflower oil. Sear the salmon for 2 minutes on each side. Finish by baking the salmon in the oven for an additional 5 minutes, or until desired doneness.
  • Combine the dressing with the tomato mixture right before serving.
  • Lay the salmon on a plate and generously spoon the salsa on top. Accompany with lime wedges and steamed jasmine rice, if preferred.
