Grilled salmon paired with fresh tomato and corn salsa for a delicious summer meal.
Ingredients:
  • 2 small tomatoes, cut into 1cm cubes
  • 1/2 small red onion, finely chopped
  • 125.00 ml feta-stuffed olives, sliced
  • 20.00 ml red wine vinegar
  • 1 garlic clove, crushed
  • 4 (x 200g) Atlantic salmon fillets, skin removed
  • 1 corn cob, husk removed
  • Olive oil cooking spray
  • 20cm piece Turkish bread, split
  • Salad leaves, to serve
Instructions:
  • In a small bowl, mix together tomatoes, onion, olives, vinegar, and garlic. Season with salt and pepper, cover, and refrigerate.
  • Before grilling, heat up the barbecue to medium-high. Lightly coat the salmon and corn with oil, then season with salt and pepper.
  • Barbecue corn until kernels are lightly charred and tender, approximately 5 to 7 minutes. Remove from heat and wrap in foil to keep warm. Barbecue salmon until cooked to your liking, about 3 to 4 minutes per side. Set aside. Cook bread for about 1 minute per side, or until warmed through.
  • Remove the corn kernels from the cob and mix them into the tomato salsa. Cut the bread into quarters. Place a piece of salmon on each plate, then top with the corn and tomato salsa. Serve with bread and salad greens.
