Vibrant summer salmon with fresh garden tomatoes - bursting with flavor and perfect for hot days.
Ingredients:
  • 0.25 cup fresh lime juice
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons soy sauce
  • 3 tablespoons shallots, chopped
  • 1 teaspoon sugar
  • 0.5 cup diced pineapple
  • 2 large plum tomatoes, diced
  • 0.25 cup chopped fresh basil
  • salt and pepper to taste
  • 4 (6 ounce) fillets salmon
  • 0.5 cup chicken broth
  • lemon pepper to taste
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) to ensure the perfect cooking temperature.
  • Combine lime juice, olive oil, soy sauce, shallots, and sugar in a bowl. Mix in pineapple, tomatoes, and basil. Season with salt and pepper. Chill covered, then take out of the refrigerator 10 to 15 minutes before serving.
  • Lay the salmon in a 9x13-inch pan, cover it with chicken broth, and sprinkle with lemon pepper for a burst of flavor.
  • Cook the dish in a hot oven until the fish easily flakes with a fork, which should take around 30 to 40 minutes. Accompany it with salsa served on the side.
