Salmon Teriyaki Skewers with Pineapple

Teriyaki salmon skewers with grilled pineapple and green onions.
Ingredients:
  • 1/2 cup soy sauce
  • 1/4 cup mirin rice wine or rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 1/4 cup green onions, minced
  • 2 tablespoons vegetable oil
  • Pinch chili pepper flakes
  • 1 pound salmon fillet, rinsed, cut into 1 to 1 1/2-inch cubes
  • 1 pound fresh pineapple, cut into 1 to 1 1/2-inch chunks
  • 2 green onions, cut into 1-inch segments
  • 8 bamboo skewers, soaked in water for at least 20 minutes before using
Instructions:
  • Prepare the teriyaki marinade by combining soy sauce, mirin or rice vinegar, brown sugar until dissolved. Stir in fresh ginger, minced green onions, chili pepper flakes, and vegetable oil in a bowl.
  • Coat salmon cubes in marinade in a bowl. Cover and refrigerate for 1 to 2 hours.
  • Simmer marinade: Take the salmon out of the marinade. Transfer marinade to a small saucepan and bring to a boil, then let it simmer for 10 minutes. Remove from heat and set aside.
  • Grill or broil: Skewer salmon, pineapple, and onion. Oil grill grates for high, direct heat. Grill skewers, turning once and basting with marinade, until salmon is just cooked through. Serve hot.
