Juicy broiled salmon with sweet pineapple - ideal for a quick weeknight dinner.
Ingredients:
  • 4 tablespoons maple syrup, divided
  • 1 tablespoon low-sodium soy sauce (such as Bragg®)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon freshly grated ginger
  • 2 (6 ounce) skin-on center-cut salmon fillets
  • 0.25 teaspoon Cajun seasoning
  • 1 serving cooking spray
  • 2 slices fresh pineapple, halved
  • 2 wedges lemon
Instructions:
  • In a bowl, whisk together 2 tablespoons of maple syrup, soy sauce, lemon juice, and ginger. Add salmon to the marinade, ensuring it is fully coated. Marinate for 15-30 minutes.
  • Prepare the glaze by combining the 2 tablespoons of maple syrup with Cajun seasoning in a bowl. Set it aside for later use.
  • Position an oven rack 6 inches below the heat source and preheat the broiler on low.
  • Prepare a foil-lined baking sheet and give it a light spray of cooking oil. Take the marinated salmon out, dab it dry with paper towels, and lay it skin-side down on the sheet along with the pineapple. Coat them both with the glaze.
  • Cook the salmon under the broiler until it easily flakes with a fork and reaches an internal temperature of 145 degrees F (62 degrees C), for 13 to 15 minutes.
