Try our simple yet delicious baked salmon with wilted spinach; a flavorful meal with minimal ingredients that will surely impress.
Ingredients:
  • 125ml orange juice
  • 2 tsp freshly grated ginger
  • 1 garlic clove, crushed
  • 4 x 180g salmon fillets, without skin
  • 150g baby spinach leaves
Instructions:
  • Preheat your oven to 200°C while you line a baking tray with baking paper.
  • In a small saucepan over medium heat, combine orange juice, syrup, ginger, and garlic. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 8 minutes, until slightly reduced and syrupy.
  • Lay salmon on baking tray. Set aside half of the maple glaze. Brush the remaining glaze over salmon. Bake for 8-10 minutes until desired doneness, brushing with reserved glaze halfway through.
  • Heat olive oil in a large non-stick pan over high heat. Add baby spinach and cook for 2-3 minutes until just wilted. Season with sea salt and freshly ground black pepper to taste.
  • Present the savory wilted spinach alongside the delectable salmon fillets on four individual serving plates, and elegantly drizzle any leftover glaze onto the salmon.
