Maple and balsamic glazed salmon

Easy maple balsamic baked salmon, perfect for a crowd.
Ingredients:
  • 6 pickling onions, cut into thin wedges
  • 1 garlic bulb, halved horizontally
  • 168.75 gm maple syrup
  • 62.50 ml white balsamic vinegar
  • 2 tsp fresh thyme leaves, plus extra sprigs to serve
  • 1.5kg whole side of salmon (skin on)
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare a large baking tray lined with baking paper.
  • Spread the onion and garlic on the tray. Drizzle with oil and sprinkle with salt and pepper. Bake for 20 minutes until lightly caramelized and softened.
  • In a small saucepan over medium-high heat, combine maple syrup, balsamic vinegar, and thyme leaves. Bring to a boil, then reduce heat to medium and simmer for 5 minutes until slightly thickened. Remove from heat and let it cool for 5 minutes before using.
  • Take the baking tray out of the oven. Lay the salmon over the onion and garlic. Glaze the salmon with the maple mixture. Bake for 15 minutes, basting the salmon with the glaze every 5 minutes until it reaches medium doneness. Serve the salmon with garlic and onion, and garnish with additional thyme sprigs.
