Elevate dinner with sweet and sticky pork paired with juicy pears and crispy greens.
Ingredients:
  • 40.50 gm maple syrup
  • 20.00 ml balsamic vinegar
  • 1/4 tsp dried chilli flakes
  • 2 large Beurre Bosc pears, cored, cut into wedges
  • 450g pork fillet, fat trimmed
  • 10.00 gm cold water
  • 1 bunch watercress, sprigs picked
  • 200g snow peas, trimmed, halved, blanched
Instructions:
  • Preheat the oven to 180C. In a bowl, mix together maple syrup, vinegar, and chili, then season the mixture. Brush the pear with some of the maple syrup mixture.
  • Preheat an ovenproof non-stick pan over medium-high heat. Coat with olive oil spray. Sear pork for 3-4 minutes until browned on all sides. Remove from heat, pour over remaining maple syrup mixture and water, cover with foil, and roast for 15 minutes. Rest before serving.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill the pear, turning occasionally, for about 4 minutes or until nicely charred. Transfer the pear to a plate and cover with foil to maintain its warmth.
  • Transfer the pork to a chopping board using tongs. Place the frying pan over medium heat and bring the pan juices to a boil. Simmer and stir occasionally for 2 minutes until the mixture thickens. Thinly slice the pork.
  • Place a colorful array of watercress, snow peas, pear, and pork on a platter. Drizzle with the flavorful pan juices for a tantalizing finish.
