Create a quick and affordable meal with just 6 ingredients!
Ingredients:
  • 8 small carrots, trimmed, peeled, halved lengthways
  • 6 small parsnips, peeled, quartered lengthways
  • 84.38 gm maple syrup
  • 30.00 ml fresh thyme leaves
  • 36.40 gm olive oil
  • 4 (200g each) pork cutlets
Instructions:
  • Preheat your oven to a piping hot 220ºC (200ºC fan-forced).
  • In a large ceramic baking dish, place the carrot and parsnip. Mix maple syrup, thyme, and half of the oil in a bowl, then pour over the carrot and parsnip. Toss to coat evenly. Bake for 25 to 30 minutes until tender and golden.
  • In a frying pan over medium-low heat, heat the remaining oil. Cook the pork for 5 minutes on each side or until fully cooked. Serve with carrot and parsnip.
