Delicious pork dinner in 10 minutes!
Ingredients:
  • 36.40 gm olive oil, plus extra to drizzle
  • 4 x 200g pork cutlets
  • 200g small Swiss brown mushrooms, halved
  • 60ml maple syrup
  • 35.10 gm wholegrain Dijon mustard
  • 60ml cream
  • 200g green beans, trimmed, blanched
  • 1 apple, thinly sliced into matchsticks
  • 1/2 bunch parsley, leaves picked
  • Juice of 1/2 lemon
Instructions:
  • In a hot frypan, sear seasoned pork for 2 minutes on each side. Lower the heat, add mushrooms, then glaze the pork with maple syrup. Continue cooking and turning for 4 minutes until golden. Rest the pork on a plate, covered loosely with foil.
  • Combine mustard, cream, and 2 tablespoons of water with the mushrooms in the pan. Stir until well mixed and heated.
  • Mix the beans with the apple, parsley, and lemon juice, then generously drizzle with more olive oil. Serve the pork cutlets alongside the apple salad, mushrooms, and pan juices.
