Elevate your weeknight pork by pairing it with maple syrup glazed apples.
Ingredients:
  • 18.20 gm olive oil
  • 4 (about 800g) pork loin cutlets, trimmed
  • 1 Granny Smith apple, cored, cut into thick wedges
  • 1 red apple, cored, cut into thick wedges
  • 4 French shallots, peeled, quartered
  • 3 tsp chopped fresh thyme
  • 125ml (1/2 cup) boiling water
  • 60ml (1/4 cup) Maple Syrup
  • 1/2 chicken style stock cube, crumbled
  • Mashed potato, to serve
  • Steamed green round beans, to serve
Instructions:
  • Heat the oil in a large, deep frying pan over medium-high heat until shimmering. Season the pork and cook for about 5 minutes until golden brown. Flip the pork over to cook the other side.
  • Transfer the apple, shallot, and thyme mixture to the pan. Sauté for 5 minutes or until the pork is browned and nearly cooked through. Place the pork on a plate and cover with foil to maintain warmth.
  • Continue cooking the apple mixture for another 2 minutes. Mix water, maple syrup, and stock cube in a jug. Pour mixture into the apple mixture and stir for 2 minutes until well combined. Add the pork back into the pan and cook for 2 more minutes, turning once, until the sauce thickens. Plate the pork and apple mixture. Serve with mashed potatoes and green beans.
