Maple Pork with Figs

Quick and delicious pork dish paired with apple and figs for a burst of flavor in just 25 minutes.
Ingredients:
  • 4 bone-in pork loin chops, 1/2 inch thick (about 1 1/4 lb), trimmed of fat
  • 1/2 cup apple juice or dry red wine
  • 1/4 cup real maple syrup
  • 1/3 cup coarsely chopped dried figs
  • 1 teaspoon cornstarch
  • 1/4 cup water
Instructions:
  • Prepare a 12-inch skillet with a light coating of cooking spray and heat it over medium-high heat. Season the pork with salt and place it in the skillet. Sear for approximately 5 minutes, flipping once, until nicely browned. Transfer the pork from the skillet and keep it warm.
  • Add the apple juice, maple syrup, and figs to the skillet. Cook over medium-high heat for 5 minutes, stirring frequently until combined.
  • Combine cornstarch and water in a small bowl, then add to the juice mixture. Cook over medium-high heat for about 2 minutes, stirring constantly until thickened and clear.
  • Reduce the heat to medium and place the pork back into the skillet. Spoon the flavorful sauce over the pork and allow it to simmer for about 2 minutes until the pork is fully cooked and no longer pink in the center.
