Indulge in sweet pork fillets paired with a refreshing side salad for a gourmet meal.
Ingredients:
  • 750g pumpkin, deseeded, cut into 1.5cm-thick wedges
  • 2 tsp fennel seeds, lightly crushed
  • 125ml (1/2 cup) fresh orange juice
  • 60ml (1/4 cup) maple syrup
  • 2 tsp finely grated fresh ginger
  • 1 garlic clove, crushed
  • 600g pork fillet
  • 1 bunch rocket, trimmed
Instructions:
  • Begin by preheating the oven to 200°C. Line 2 baking trays with non-stick baking paper. Arrange the pumpkin slices in a single layer on one of the lined trays. Give them a light spray of olive oil and a sprinkle of fennel seeds, then add a touch of pepper. Roast for 30 minutes until beautifully golden.
  • In a small saucepan over medium-high heat, combine orange juice, maple syrup, ginger, and garlic. Bring to a boil, then reduce heat to medium and simmer for 5 minutes until the glaze thickens slightly.
  • Preheat a large non-stick frying pan over high heat and generously coat with olive oil spray. Place the pork in the pan and sear each side for 1-2 minutes until golden brown. Then, move the pork to the prepared baking tray.
  • Apply half of the glaze on the pork. Bake in the oven for 15 minutes for medium or until desired done-ness, brushing with some more glaze halfway through. Cover with foil and let it rest for 5 minutes before serving.
  • In a large bowl, mix together the pumpkin, rocket, and onion. Slice the pork thickly and divide both the salad and pork among serving dishes. Finish by drizzling over the remaining glaze before serving.
