Maple pork chops in savory Progresso® broth with pumpkin risotto - a delicious Italian meal ready in just 35 minutes!
Ingredients:
  • 2 tablespoons margarine or butter
  • 4 center-cut pork loin chops
  • Salt and pepper to taste, if desired
  • 1 1/2 teaspoons maple flavoring
  • 3/4 cup uncooked Arborio or other short-grain white rice
  • 1 clove garlic, finely chopped
  • 1 cup canned pumpkin
  • 3 cups Progresso™ chicken broth (from 32 oz carton)
  • 1/4 cup shredded Parmesan cheese
  • 1/4 teaspoon salt
Instructions:
  • In a 12-inch skillet over medium-high heat, melt margarine. Season pork with salt and pepper, then sear in the melted margarine for 5 minutes, flipping once, until golden brown. Remove pork from skillet and brush both sides with maple flavoring.
  • In a skillet, sauté rice and garlic over medium heat for 30 seconds, stirring frequently. Add pumpkin and 1/2 cup broth, cook uncovered until liquid is absorbed. Stir in another 1/2 cup broth, and continue cooking for about 15 minutes, stirring constantly and adding broth in 1/2 cup increments after each absorption.
  • Place the pork along with any remaining broth into the skillet. Cover and simmer for 5 to 10 minutes until the pork shows a slight pink hue near the bone, and the rice is creamy and just tender. Gently fold in the cheese and season with salt.
