Roast pork with maple apple sauce

Classic roast pork with veggies - a family favorite!
Ingredients:
  • 2kg Pork Boneless Leg Roast
  • 36.40 gm olive oil
  • 9.60 gm sea salt flakes
  • 500g washed potatoes, cut into 3cm pieces
  • 1 gold sweet potato, cut into 3cm pieces
  • 1 carrot, peeled, diagonally sliced crossways
  • 1 large zucchini, thickly sliced
  • 1 brown onion, coarsely chopped
  • 4 Granny Smith apples, peeled, cored, coarsely chopped
  • 54.00 gm maple syrup
Instructions:
  • Preheat your oven to 230°C. Place the pork in a large roasting pan. Gently massage the oil and salt onto the pork rind and cuts. Roast for 30 minutes until the rind is crispy. Lower the oven temperature to 180°C. Continue roasting for 1 hour and 40 minutes or until the pork is cooked through, adding the potato, sweet potato, carrot, zucchini, and onion to the pan for the last hour. Cover the pork with foil and let it rest for 20 minutes before serving.
  • In a saucepan over medium heat, simmer the apple with 1/4 cup (60ml) water, maple syrup, and vinegar until the apple is tender, about 8-10 mins. Mash roughly with a fork and transfer to a serving bowl.
  • Drizzle the apple sauce over the pork and vegetables for a delectable finish.
