Spicy, sweet, sticky Asian pork cutlets - perfection!
Ingredients:
  • 54.00 gm maple syrup
  • 42.00 gm soy sauce
  • 20.00 ml finely grated fresh ginger
  • 1 tsp Chinese five spice
  • 1/2 tsp ground Sichuan pepper
  • 4 (200g each) pork loin cutlets
  • 600g chat (small coliban) potatoes, thinly sliced
  • 2.40 gm sea salt flakes
  • Baby Asian greens, to serve
Instructions:
  • In a large glass bowl, mix together maple syrup, soy sauce, ginger, garlic, five spice, and Sichuan pepper. Add pork and ensure it is coated thoroughly. Cover and refrigerate for 3 hours to enhance flavors.
  • Preheat the oven to 200°C. Line a baking tray with non-stick baking paper. Place the potato on the tray, drizzle with oil, and season with sea salt. Bake for 30 minutes, turning once, until golden brown.
  • Preheat a barbecue or chargrill on medium heat. Cook pork for 3 minutes on each side. Transfer to a plate, cover with foil to keep warm, and let it rest for 5 minutes.
  • Plate the potato and pork individually on serving plates and accompany with baby Asian greens.
