Delicious sticky pork, perfect for quick weekday meals.
Ingredients:
  • 45.00 gm brown sugar
  • 600g boneless pork rashers, cut into 2.5cm pieces
  • 82.50 ml shao hsing (Chinese cooking wine)
  • 3cm piece fresh ginger, peeled, cut into matchsticks
  • 2 star anise
  • 1 cinnamon stick
  • 21.00 gm soy sauce
  • 1 green onion, thinly sliced
  • Steamed jasmine rice, to serve
  • Sliced red chilli, to serve
Instructions:
  • In a hot wok, caramelize sugar by stirring constantly for 2 minutes. Add pork and 2 cups cold water, and cook until mixture boils and sugar dissolves, forming a rich toffee glaze.
  • Pour in the wine, ginger, star anise, and cinnamon. Lower the heat and let it simmer for 1 hour and 30 minutes until the liquid is reduced. Add soy sauce and cook for an additional 2 minutes until it becomes sticky.
  • Garnish pork with fresh green onions and serve alongside fluffy steamed rice, crisp beans, and a spicy chili sauce.
