Quick and easy juicy pork chops for a relaxing meal.
Ingredients:
  • 4 (185g each) pork loin chops
  • 32.00 gm brown sugar
  • 36.40 gm olive oil
  • 3 golden delicious apples, cored, cut into thin wedges
  • 250g truss cherry tomatoes, cut into 4 bunches
  • 100g baby salad leaves
  • 56.88 gm olive oil
  • 20.00 ml balsamic vinegar
  • 11.80 gm wholegrain mustard
Instructions:
  • - Prepare the pork by rubbing both sides with sugar and placing it in a glass or ceramic dish. - Heat oil in a large non-stick frying pan over medium-high heat. - Cook the pork for 1 minute on each side until golden and caramelized. - Reduce heat to medium and continue cooking for 2 to 3 minutes on each side until fully cooked. - Transfer the pork to a plate, cover, and let it rest for 5 minutes before serving.
  • Add the vibrant combination of apples and tomatoes to the pan, and cook until the apples are tender, about 5 minutes, gently turning them occasionally.
  • Prepare balsamic dressing by combining oil, balsamic vinegar, and mustard in a screw-top jar. Season with salt and pepper, then securely close the lid and shake well to blend all the flavors.
  • In a bowl, combine salad leaves with a drizzle of balsamic dressing. Toss gently. Serve pork on plates, topped with apple slices, tomatoes, and the dressed salad. Enjoy!
